Red Wine Cake of Assmannshausen (German Red Wine Cake)
Yield 8-10 servings
G = gram
Tsp = teaspoon
Ml = millileater
250 g butter; softened
250 g sugar
4 eggs
1 tsp vanilla essence (5 ml)
250 g self-rising flour
3 heaped tablespoons cocoa
2.5 tablespoons cinnamon
1 pinch salt
100 g chopped dark chocolate
100 g chopped almonds
125 ml German style red wine
Icing sugar.
Beat together the butter, sugar, eggs and vanilla essence until light and fluffy. Then fold in the flour, cocoa, cinnamon and salt.
Mix well, then when the batter is smooth, add the red wine, chocolate and nuts. Mix well together.
Pour into a buttered kugelhopf or loaf tin and bake at 175c for 70-80 minutes.
Remove from the oven and cool slightly before removing from the tin. Dust with icing sugar and serve warm or cool with cream.
